



Cooking-melting-kneading & moulding machine specifically designed to produce mozzarella, pizza-cheese, burrata and analogue cheese by using fresh curd, frozen curd (previously thawed/defrosted) and/or food ingredients and powders. This compact unit is perfectly suitable for small, artisan and R&D productions aiming to automate the processing or product trials but still prefer to keep production quantities small.
The compact cooker-stretcher & moulder is composed of:
- A cooking, kneading and stretching section with counter-rotating and independent augers and direct steam heating
- A moulding section with two augers and heated jacket
- A PLC control panel for the automatic control of the process providing the possibility of setting and saving up to 20 different recipes
